The best and simplest paring knife is a razor blade mounted on half a coffee stir stick. It provides a perfectly curved blade that helps the cut to open up and gives the coveted ear to the bright sourdough bread.
Supplied in a pack with five razor blades, two stirring sticks and instructions. Mounted by carefully bending the razor blade between two fingers so that the stirring stick can be inserted and clamped in two of the razor blade's holes.
Wash with washing-up liquid after assembly and before use. Change the razor blade after 10 breads or when it seems dull.
Be careful when fitting, as razor blades are really sharp.
