Einkorn - whole kernels

Whole einkorn kernels, organic. The progenitor of all cultivated wheat species is einkorn. It is an ancient wheat that can be traced back to around 10,000 BC. Einkorn is a primitive type of wheat in the sense that it is related to wild grass species. Einkorn flour is yellow because there is a high content of beta-carotene in the kernels. It is the coloring matter which is also found in carrots and which is a precursor to vitamin A. The protein content of einkorn is high.
