Barley flour is a fine whole grain flour, where 100% of the grain is used. Barley is one of the cereals that we grow the most here in Denmark, and it is an old cereal that we have used a lot through the ages, e.g. for barley red, expensive fodder or for beer production. Barley does not contain much gluten, so if it is used alone the breads will be thin. Barley flour is good for mixing with other types of flour, and unlike other types of grain, barley contains large amounts of the substance betaglucan and amino acids. The flour is ground on stone mills.
